Honey Whole Wheat Bread

 Ingredients:

2 1/2 cups bread flour
2 1/2-3 cups whole wheat flour  
1/4 cup butter
1/4 cup honey
1 tbs salt
1 cup milk
1 cup water
2 1/2 tsp active dry yeast 

Directions:

On your stove top add butter, honey, salt, milk and water together. Heat over medium heat until butter is melted. Remove from heat and set aside to cool to just above room temperature (about 80 degrees).

In the bowl of your electric mixer with the dough hook attachment, add in yeast and bread flour. Pour in your wet ingredients beating on medium speed.

Add in your whole wheat flour 1/2 cup at a time until dough comes together and is only slightly sticky. Turn mixer on high and beat until smooth and elastic. About 3 minutes.

Turn dough out into a buttered bowl. Cover in a warm place  and allow to rise until doubled. For me it is about one hour.

After dough has risen, dived in two. Shape into balls. Place on parchment paper lined cookie sheets. Cover and allow to rise a second time until doubled. Usually about 30-45 minutes. I like to slice an X on top with a sharp knife right before baking. This is optional. 

Bake at 400 degrees on the center rack for about 15 minutes. Or until golden and sounds hollow when you flick the tops.

Allow to cool for about 30 minutes before slicing. Enjoy warm with butter!
